To answer your question, I would think that one of the main things in demand would be inexpensive housing. I've noticed that hispanics aren't picky about where they live, with several families often living in one small house. Wire transfer services would probably be another safe bet. Maybe a Western Union outlet for wiring $$$. They are lined up at my local WU office every Friday. Some English classes would be in order too.
