The boneless pieces are just strips of meat from the large muscles of the chicken, usually the breast or outer thigh. Those are large areas of meat where there are no bones, none to be removed. Simple.

First you take a pair of vise grip pliers and clamp onto the end of one of the leg bones.

Next, raise the pliers and the attached chicken well over your head.

Next, produce a rapid downward swinging motion.

When you get near the bottom of your swing, snap your wrist very quickly upward.

Voila! The bones come cleanly out of the chicken.

It is best to have a clean plastic cloth on the floor to catch the chicken parts.

My Butcher makes us turducken all the time. he has shown me
you put the whole bird chest down slice down his back and slowly work your way around his stomach bones the wing bone and drumstick still have the bone but everything else is boneless then he uses string to tie up the back flips it over and presto no bone bird

Use a very sharp fillet knife. Its easy, slice then lift up and take bone out and replace piece you lifted up.
