It seems that Brunch times vary from place to place. I have always liked the before lunch time of 11:00 am through the before dinner time of 4:00 pm. That way it gives you enough time to eat and do "whatever" and not have to worry about having dinner as you certainly will have eaten enough for the day. You might only want a light late snack of some sort in the evening.
If this is to be a romantic brunch you might want to plan on some movie to view that you both will enjoy, some music to listen and dance to, also, and perhaps a break from eating with a drive to the country for awhile. I'm sure you and your mate can figure out other ways to spend time in between eating!!!! You might start your brunch at home and finish it on a picnic in a park or country setting with desert. On your return home you may have the cocktails or after dinner wines.

Brunch is in between breakfast and lunch. And I have no idea what is served. If you want something casual, why don't you just go to lunch?
