You don't want to mix crude oil with products. Hence you usually dedicate tankers to carry only crude oil or only products (often referred as dirty vs. clean). Crude tankers tend to be larger than product tankers and move longer distances (i.e. you move crude from Saudi Arabia to the US while you move products from the US Gulf to NYC). Product tankers also often feature multiple tanks to separate the different products (gasoline vs. jet fuel vs. heating oil).

The crude is dirtier and may be so thick it has to be heated to get it out. Products are cleaner and can be cleaned out. Normally swapping between the two is not done.
