There should be an option to allow you to monitor the recording in Cool Edit. Keep in mind you will probably hear latency or 'an echo' because of the time required to go from input of computer, be processed, then out.

As for your mic not being in the Mixer, that's an entirely separate issue. You may have incorrect drivers, or could be that the soundcard doesn't support Multiplex Mode.
