I'm limited on time and there are just so many to see! If you could only visit the interior of one, which would it be? Give reasons please!

Because you just mentioned Berlin (and not Potsdam): It's definitely the Charlottenburg Palace. It not only features the most important equestrian statue in Germany (in front of the palace), but also are the rooms restored (the building was partly destroyed in WWII) in a very original way - there are no bad copies like in some other german castles.
And of course for it's sheer beauty: It was once made for a woman of a princess' kind, so it better had to be beautiful, especially from the inside.
There are also some other buildings in the park of charlottenburg palace, especially the Belvedere and the Mausoleum are nice.
some websites:

There are some different tickets available - maybe the best one is the one including also the entrance to all buildings in the garden, I think it's about 13 euro, including a guided tour through some areas.

However, if you like palaces, then a visit to Potsdam is a must - the whole Park Sanssouci (about one hour from Berlin) with it's dozen palaces and palace-like structures is a wonder of the world. (However, it would take more than a day to visit them all from the inside).
