Texas Roadhouse Ribs with baked potato, a side Caesar salad and those EXTREMELY delicious buns with the cinnamon butter!

Every once and awhile you have one of those meals that is so good the memory of it haunts you over the years.

It was the late 1970s and my family took one of those family vacations to Cozumel, Mexico. My dad and I decided to take one of those day trips to see the Mayan ruins. This involved a boat ride across the gulf and then a few hour bus ride through the Yucatan jungle to the actual site. Lunch was included as a part of the trip. So... there we were smack dab in the middle of the jungle when the bus pulls over to what was literally a thatch roof hut. Although the outside was *very* rustic the inside was tastefully appointed with tables enough for our busload of people. They served a dish called "Chicken Yucatan". It was a marinated chicken (marinated in what I wish I knew) wrapped in banana leaves and then slow cooked in a pit.

OH MY FLIPPIN' GOD!!!!!!!!!!!!

Not only was it the best dish I have ever put in my mouth (which I assure you is saying something), to have it served literally in the middle of the jungle, where one would expect that being carried off by a jungle critter would be much more likely than finding a good restaurant, made it an experience I will never forget.

The most delicious meal I've ever had was in Patong, Phuket Island, Thailand, at a little beach restaurant. We started with soft spring rolls with sweet grilled pork, rice noodles, shredded marinated carrot, mint, and basil. The main dish was huge (like the size of small lobsters) super-fresh prawns in the shell, butterflied and grilled with sea salt and hot chiles. The prawns were served with steamed rice and a cilantro-coconut milk sauce. Dessert was homemade mango granita with little chocolate-dipped piroulines on the side. The meal was memorable because everything was simple and fresh. Plus, being hungry from a day at the beach didn't hurt!

My favorite meal is miso soup, a caterpillar roll (grilled freshwater eel with cucumber and avocado on the outside), tuna sashimi with goat cheese and balsamic vinegar, and a few pieces of yellowtail and tamago nigiri at Uchi in Austin, Texas. With a glass of a light, fresh white wine on the side. Not one I get to have too often, since Uchi is soooo pricey!

Most delicious and best prepared and served was the lobster and lamb entre at Kokomo's in the Mirage-Las Vegas. Their lobster bisque is to die for delicious! Expensive without a doubt but the service, presentation and actual preparation of the meal was delightful!

The best meal I have ever had was at the Eiffel Tower restaurant in the Paris hotel in Las Vegas. We paid right at $300 for 2 people. The meal was wonderful and the view of the Bellagio fountains at night made for a very memorable evening.

The best dinner I ever ate was at a restaurant in the hotel in Las Vegas across from the bellagio fountains. It was chillean sea bass. Amazing food, done perfectly and just the right flavors.

After my oldest son was born my mother came to our apartment to help me with my new first baby. I was so scared in the hospital I didn't eat much. My mom made this dinner of pork chops with this tomato sauce, some egg noodles, ceasar salad and garlic bread. Then she had some Boston Cream Pie ...it was the best meal I ever ate in my life... I miss my mom.

A fresh Ceasar salad, a freshly grilled t-bone or Porterhouse steak served medium or medium rare, a piping hot baked potato w/real butter and salt/pepper to taste. For dessert a bowl of lemon sherbet! Has my mouth watering... how about you???

My favorite dinner is Lasagna with garlic bread. But my favorite food is a large stuffed crust meat lovers pizza from Pizza Hut. Yum!!!! Now I am getting hungry.
