Here's something creative that will be appreciated and you will have fun doing:
Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!
The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.
Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.
Use graph paper, and pictures from magazines if you are not as good on the computer, and it will give it a homemade feeling.

The old cliche.... Anything home made. There's nothing more precious than a work of art (or otherwise) made by your kids own bare hands. It's absolutely priceless.
Difficult if you're over 6 years in age, but a little thought goes a long way. It's not money that counts, it's the time you spent making/ chosing/ writing it.
Even a little poem you write will mean the world. I'm not a sentimental person at all, but my best and favourite little belongings are an owl made from clay (with one eye, teeth and very strange feet), a little note reading... 'I'm sorry about your breeving' (when I had a chest infection). And most of all, the photos of my little sprogletts, that make me smile whatever the weather. Any token gift from a child to a mother means the Earth. Just be sure to handwrite the punchline.

Well, my mother is dead, so I won't be buying any gifts for her. One Mother's Day, I sat in church with my then-husband and son, after just having had a miscarriage 2 days before. The pastor called all mothers to stand up according to how many children they had. It broke my heart and I cried. The following Mother's Day, I was in church again with my 1-week-old daughter, dedicating her to God. I generally don't like to celebrate Mother's Day because I believe that it is a holiday that is commercially motivated now and it puts pressure on kids to treat their moms extra special when they might have not done so during the year.
Because I no longer have my mother and because I myself am a mother, I can tell you that gifts don't mean nearly as much to me as a hand-made card or note which expresses to me how my children feel about me. Throughout the year, there are times that kids will try the patience of a mother and will seem that they don't appreciate all that their mother does to show she loves them. When a mother receives a card or note expressing specifically what that child appreciates about their mother, that has more meaning for many mothers than roses, a fancy dinner or an expensive gift could ever have. I can't speak for all mothers, but this is how I feel, and I AM a mother.

I have this locket that can hold photos of all of my children. It's pretty cool, I love it. You could find one of those for your mom, and include photos to go with it!
