It's a Yamaha 750 Maxim 4 Cylinder, the bike doesn't seem to be overheating , it sits and idles fine, but if ridden for more than 5 minutes loses power and then dies. After waiting 15 minutes or so it will start and run again for another 5, what do you think this is?

Sounds like you're leaving the choke on. High float bowl levels can make it too rich and bog down when it's warm. The float needles in those things tend to leak a lot too, and flood the engine.
And, if you've never cleaned the filer screens on the fuel petcocks, you're running the carbs dry because you're only getting a trickle of gas. Throw those suckers out and put some real fuel filters on the lines.

Possibilities are a flooded engine (too much gas from the carburetor) or a heat sensitive ignition problem. Try removing the air cleaner when you hot start it and holding the throttle wide open to let as much air as possible into the engine. That's called the "clear flood" mode on automobiles where you press the accelerator all the way to the floor and hold it there to start a hot flooded engine.
