I'm not asking for a picture symbol.
Just as Zues' symbol is his lighting bolt,
what is Hercules' symbol?

As a young man Hercules killed a lion with his bare hands. As a trophy of his adventure, he wore the skin of the lion as a cloak and its head as a helmet.

Hercules (Roman Hero) Herakles (Greek Hero) try opening a book okay. Find out more by reading about the twelve labors of Herkules.

i think your additional details are skewed, zeus' symbol wasn't the lightning bolt, although yes, he did have power over it

to see zeus' symbol (even though i'm quite aware you said not a picture) - click here - http://en.wikipedia.org/wiki/Image:Jupiter_symbol.svg

accordingly, heracles was a hero, not a god. he did have divine blood, yes, and later was admitted to olympus, but he is not a deity over any realms

he did not have a specific symbol, instead they wrote out his name, the greeks were into scribing their histories, unlike the norse, who mostly told by word-of-mouth

if anything is to represent heracles, it would probably be the nemean lion skin, from his first challenge, as already stated by other answers

The symbols for the Greek god Heracles were the lion-skin cape and the gnarly club.

The Greeks didn't use anything like glyphs or abstract symbols for their gods. Rather their accroutements in art were their "symbols."

The lion-skin and the club, because he was usually depicted wearing the skin of the Nemeian Lion, and the club because he carried one around, though he often also used a sword and was renowned as an archer of great skill.
