They were original called this because they were carbonated drinks formed from concentrates. The name was due to the fact that a "drink" meant some type of alcoholic beverage. So "soft drink" refered to a carbonated drink with no alcohol which we now called soda, etc.

In the States,depending on geographical location,if you're not hittin' the bottle you might ask for a coke
[which depending on region can be a generic term for soft drinks.] a soda pop,a pop, a soda
may be others---they all mean gimme a coke or 7-up
or something.

because there is no liquor or alcohol in it. if it did have alcohol in it it would be HARD like Mike's HARD Lemonade (it has alcohol in it) but then Coke is a SOFT drink because, as far as i know, there is no alcohol in it :)
