Click and drag. Oh, but make sure you are not displaying the album artwork with the track names when doing so, as that will make it impossible to drag a track to insert it between songs from two different albums, even if it's from the same album as one of the two songs (I'm not sure why, but I've never been able to do this in anything but text-only mode). This will, however, only work for playlists. If you're browsing by album, artist, genre, or any other sort method, the only way to reorder tracks is to start fiddling with the track data.
Anyways, once you have a playlist sorted in the order that you want, sync your iPod, and that playlist will automatically update to the order as it is currently displayed on iTunes. This means that if you sort a playlist alphabetically by track name, by album name, by artist name, or any other information field (by clicking on the field descriptions at the top of the window), resynching your iPod will automatically resort to that order as well, and it will stay that way until such time as you reorder the tracks in iTunes and resynch your iPod to match the new playlist order. And again, this only works for playlists.

On your iPod, you can't change it, it's in alphabetical order. On iTunes, when you're under your songs, click on artist if you want it in order by artist, click on album if you want it in order by album, etc. You can also right click on the bar right above your songs and add and remove tabs that display information about your songs. depending on what ipod you have you can suffle the songs or go to the playlists and go to artists and it will play the arists songs
