Its by poll. they will phrase a question then pose it either in person or by phone or by some method ask a sample of people that question.
However I find that if you study the polls a bit on when and where and how many people are polled and if the pollsters release their data you will often find it isnt completely random or unbiased.
Often the questions are slanted and usually, whoever is doing the poll polls in places that in generally favor the point of view they would like to show.

They do a random poll.
They might pick 1,000 phone numbers at random.
A computer picks them.
They then ask specific questions.
The more reliable polling company ask the same questions, in more than one way.
That way, they can tell if a certain question isn't worded right.
It's half science and half experience to come up with valid questions that give reliable answers.
But it is easy to lead the people being polled, to the answer the poller wants, if the poller isn't ethicial.

Alot of people think all polls are bs.
But when you look at the number of corporations who use polling data to determine what products to make, what changes to make to existing products.
They must have alot of faith in the reliability of the polls.

Polls are conducted by phone, letter and in person. Depending on the organiztion doing the polling. Generally the number of people is would be an infantesimal number and it really depends on how the questions are phrased. High or low, They histoically have not been a very good indicator of future voting results.
