the chef i used to work for taught me this lesson.........bread, he said, made in a mixing bowl doesn't have the same taste and consistancy that comes from hand kneading. He claimed, and I believe him, the the sweat and oils from the hands are induced into the bread, and that's what makes it good and correct. Now, on the surface, this sounds kinda gross. But the reality of this is that he was right. Machines will never replace humans in food prep.
