my kawasaki ninja 250 idles way to high, then stalls when i try to turn the choke off. Any ideas why?

Adjust the idle when the engine is at operating temperature and the choke is in the off position.
If you've tried that, then the carbs probably need to be cleaned.

probably running lean, check your mixture screw. screw it all the way in, count the turns. Can't remember for sure... but maybe 2.5 turns? or 3.5... anyway, if you don't know much about carburetion you may not want to tackle this yourself. Especially with more than one carb.. gotta be in sync too. And look for vacuum leaks also.
