I'm developing my website and want to include a "refer a friend" option. I know there's at least one webmaster site that lists all sorts of scripting options I could use. I don't want one that sends emails most likely to be catagorized as spam, nor one that could be taken over by spammers and cause bad reviews for my site. Just a simple, refer a friend, send the message, a thank you afterwards, and a way for me to maintain a log of referrals would be nice, but not necessary. Any suggestions? something EASY would be great...I'm a novice at this.

If what you mean is, not having the referral form sent by a spamming machine, then, one option that works purdy well is called "captcha" (which is that funny-looking "enter the letters below exactly as you see them" business you see on a lot of online forms). One place you can build a form that has one of those is www.jotform.com.

If you mean, not having your email being the target of spammers, in general, then about the best you can do is, be careful. As far as the automatic process goes, use forms that send through a server program (written in, say, php or the like) so that the web page viewer has no hint of the target email address...and don't publish your email address anywhere on your website pages!
