Does the word people make sense there if im only talking about one person?

Makes sense to me, now "one of the person" would not make much sense. When you say "one of" it is implied that it is in reference to a member of a group consisting of more than one thing.

Yes, it makes sense because you may have met many amazing people. The person that you are talking about is one of that group.

Yup, excellent sentance. "You are one" is all a singular reference to the plural group of amazing people.

unless you've only met one amazing person, then it makes sense

but if i were you, i would say, "you are the most amzing peron i've ever met"

its more romantic
