I would search on a cloudy, overcast day when they will be at rest under the edge of rocks or embankments. The cloud cover will help because you won't cast a shadow that could startle them before you get close.

Here in Pennsylvania, our freshwater crayfish are best found in rocky creeks in the middle of the day.

I just go out in the middle of the day while they're trying to hide, high sunlight. I usually don't need to get my feet that wet. I can stick to the banks and catch them or go just a few feet in. I look for likely hiding spots like under big rocks. I'll flip the rock over & they'll usually look a little confused. You can catch them on the ground (they face the floor of the creek, not the rock) as soon as you flip the rock, before they scurry away to another nearby rock.

Often times, you can get the job done using a coffee can or a pitcher to scoop them up off of the ground.

In the shallows under and around rocks. They are secretive and attack their prey from there. Find an area like this, and look carefully on the bottom for them.

Look in the day. just look under rocks. You need to slowly lift the rocks and 50% of the time they are there. GOOD LUCK!!
