According to the adage, "history is written by the victors".

For example: in America, students are taught that the brave colonists won the Revolutionary War because of our passionate ideals. However, less than a third of all the colonists sympathized with the Sons/Daughters of Liberty while unity between the states themselves hardly existed.

There are at least two points of view for every story. Chances are you're hearing the bias of the better. However, there are other perspectives (whether they're the good guys or the bad guys) who become insignificant. All history is written with bias and must be carefully weighed, realizing that not everything you read is pure.

In the modern era it is a collaborative effort between academics (i.e. like professors) and field researchers (i.e. archaeologist, anthropologists and other specialists.).

In the time of the ancients usually the Kings/Pharaoh/Caesar's
commission the writings of histories for their own posterity. But aristocrats in Greece did it out of curiosity and a genuine interest in Humanity and it's future.

educated white men tend to write the history books or at least the history up until the mid 70's. you can get fairly unbiased information about ancient history but it is pretty much impossible to get anything but biased information about u.s. history. howard zinn writes a fairly good book about american history but it's a little bit out there.

In case you do not know - Barbara Tuchman wrote several history books - and she was an excellent author.
