I would imagine it is because you are putting something which is room temperature into a freezer which is artificially making them colder, then you are bringing the items back to room temperature which is natural and not as fast.

I don't think thats always true. It takes about 3 hours for ice cubes to freeze solid in my freezer, but it doesn't take that long for them to thaw on the counter if they get left out.

Thaw them at extreme temps the same way you freeze them at extreme temps and it takes about the same amount of time.

Because you stick it in the freezer and go about your life. When you need something thawed you pay attention and notice it more.
