when deciding which verb to use, i would substitute the singlular form of apples when saying the sentence with each of the verbs and which ever sounds most accurate sounding, will be your answer. for example
Each apple are ripe now.
Each apple is ripe now.
which sounds better to you? my answer would be is. if it was all the apples is/are ripe now, you would use are because all gives away that apples is plural and are is used when plural forms are used in a sentence. each gives away that there is just one so you would use is as your verb. i hope this helped.

Each of the apples IS ripe now.

To see which is correct, you can leave the noun out of the sentence (apples).

Each is ripe now
or

Each are ripe now.

Each shows a singular noun and therefore takes a singular verb "is"

The subject of the sentence is "Each". Hence, the verb should be singular.

"...when using each is there any specific one used"

I don't understand that part of your question
