Hello, I bought three Herbs from the supermarket the other day, Parsley, Basil and Mint. I could follow the intructions on the side to water the roots and not the leaves, but what else can I do to prolong the llife of these herbs? Could i re-pot them into something bigger, and how should i harvest the leaves?

You can definitely transplant them either into your garden if you have one, or into bigger pots. Give the plants, food, and water, and they will grow great. With parsley, just cut off what you need when the plant matures, and it will keep growing, and put out more. Basil, you can also cut off what you need when the plant matures, and after you cut off what you need, tie them into a bunch, and let it dry, then you will have fresh dried basil, also you can cut fresh basil, and make a pesto with it, and man is it delicious.

Mint should be planted in pots. Unless you want it everywhere.
It is VERY invasive.
Basil also has to be kept an eye on or it will try to take over too. It is considered part of the mint family i think. So I recommend planting in a pot also.
But all the usual herbs are very easy to grow.
As far as harvesting. You just cut what you need with scissors and come fall you can cut it to the ground and hang to dry the cuttings in a garage or basement. Put the pots some place where they won't fill with snow or water & freeze then come next spring move back outside. Or you can have fresh herbs year round if you grow them indoors.

pot these on they're quite easy herbs to look after. whatever you do do not put the mint straight in the ground you will have it everywhere.

just cut the stalks of what you want. fortunatley these plants can take a battering. but with the basil make sure the stalks don't get to long so pinch them off above a leaf and it should sprout.

Once you have the roots started, plant them in some soil.
Keep them in a sunny place, possibly a windowsill. Water when needed. Cut off as needed, this will redirect the plant to produce more.
