Bottom line from life experience: If you have a gut feeling they are lying, odds are that they probably are lying.

There is no possible way to be 100% accurate (think about military professionals being trained to pass lie detectors!). It often depends on what they're lying about too.
I've learned in a psch class that when people look up, they're trying to make up something. If they look down, they're trying to remember something.
My little sister's nose would flare if she was lying!
Eye contact is obvious. Hesitiating, or saying "uhhh" is a good sign.
Just remember though, some people show signs of lying when they aren't. If you study a person well enough, you will get to know their personal signs.

I heard that men's lips move when they lie.

Uh..well generally it could be:

they aren't making eye contact (probably because they think that if they look at you in the eye, you'd have this sense that you know they're lying)

stuttering over words or saying a lot of "like" or "uhh" more than usual (trying to string the lies all together)

nervous movements (tapping fingers or feet, twisting hair, maybe because staying still is nerve wrecking)

doing irrelevant stuff (like checking the time, or tying their shoelaces while they're talking...something to stall)

Off the top of my head...
pupils contract
the person starts to sweat
pulse increases
breathing rate increases
person tenses up

And no, they don't always work. There are no signs that always work. If there were, lie detector tests would be permissible as evidence in courts.

There are lots of supposed signs so you can tell if someone is lying, but you can't depend on any of them 100%. It's a waste of time to try, in my opinion. We'd all love guarantees and control in life, but that's not how life works.

I read somewhere that if they make a declaration, "I'm being honest" they usually aren't. But I use that a lot when I'm not lying.. eh.. so who knows.
