I am near Buffalo NY and I usually put in my garden the end of May - you should be fine. I plant things similar to you - both plants & seeds. Not too late to start sunflowers - just keep in mind that sunflowers attract birds.

You could probably start the peas now - they are a cool weather crop.

The seeds should list the times for planting. You can plant underground crops earlier, but the last week of May could be OK. As for the above-ground crops, you should wait until after the average last frost date (it's the first week of May here in central Indiana, so I'm sure you are even later). Check the seed packet, too, to see how long it takes for them to produce. If it's still before the average first frost date in your area, you should be fine.
