Changing a Grunfloss pump like for like?

Is this easy how do I stop water from going everywhere?

There seems to be a funny connection above and below the pump with little square bits on what happens if I screw these in? Does that stop the water?

I think you mean Grundfos? There should be isolating valves each side of the pump, close both of these, undo the large nuts, remove pump and fit new, with new graphite washers. Transfer cable connection, open valves, bleed air and switch on.
