Let's see:
Dream Theater did Hey You, and did a pretty good job with it.
KORN destroyed Another Brick in the Wall parts 1-3. I used to love KORN until they did that.
Layne Staley and a few others did Another Brick in the Wall part 2 for The Faculty soundtrack.
I've heard a few other remakes here and there (which I can't seem to recall at the moment), but there are only two I really like. One is the Dream Theater version of Hey You. Another is this band that I heard a few years back (that's no longer together) called Still Searching, who did Comfortably Numb. They did an AWESOME job.
I prefer the originals in all other cases. One can't improve on utter perfection!

Let's add to the mix:

Dream Theatre played the entire DSOTM (as well as Phish, as previously noted).
Electron (Disco Biscuits side project) has done Fearless, quite well with an extended goa-trance jam at the end.
The girl-metal band, Kittie has done an awesome version of Another Brick II.

That's all I can think of for now, that hasn't already been mentioned, and also excluding obvious cover bands like Blue Floyd, Which One is Pink, and Austrailian Pink Floyd, et al.

Here in Toronto there is a full length concert re-make. Some band does nothing but Floyd cuts for a couple hours. It's an okay show if you don't go expecting Pink Floyd as they are. More of how these guys see them. I wouldn't go twice.

There is a tribute album of bands covering Pink Floyd classics. I prefer Pink Floyd doing their own stuff, though.

Yeah, but I don't remember which bands. All I know is that they aren't as good as the original Floyd tunes.
