The fastest century in test cricket was scored by I.V.A.Richard of West Indies. He scored 100 runs in 56 balls in the 2nd innings of 5th test of Wisden Trophy 1985/86 series between West Indies and England played at Antigua
Recreation Ground, St.John's, Antigua from 11th to 16th April, 1986.

In that match he scored 110 runs in 58 balls with the help of 7 sixers and 7 fours

The record for the fastest double century in Test cricket is held by Nathan Astle of New Zealand he scored this off 153 balls.

If you mean fastest as in time, then it is was Australia's Jack Gregory. He scored 100 in 70 minutes in the 2nd test against South Africa in 1921.

Otherwise, in terms of balls, like most of the other users have said, it was West Indie's Vivian Riachards. He scored his 100 in 56 balls in the 5th test against England in 1986.
