Amber is a mineral. Whilst in theory minerals are defined as being non-organic, there are plenty that are (coal, amber, whewhellite, etc)
Glass is not a rock. Volcanic glass, called obsidian, is a mineral in itself.

The technical definition of a rock is the mixture of two or more minerals, therefore there are no rocks which satisfy your question. While there are usually a fw execptions to every rule, not in this case. Even rocks with an organic origin are made of minerals- limestone is made of aragonite, calcite and several other carbonate minerals. The best I can think ogf would be the islands of phosphates formed by bird droppings. However these are not really rocks, and there are minerals even in these. Coal is made of various minerals, the main one being anthracite (really just a type of coal, so coal is not a rock, it is a mineral).
