I am on a panel assessing restaurant business, and the question about requiring reservations and the percent of no shows with RSVP's came up. No one has a firm handle on what percent of people with reservations either cancel or simply do not show up. Can anyone answer this question.

If I had 15 reservations for the night, my average guess is that there would be one cancellation and 2 no-shows out of that. Throw in one more that's a call that they were running late and could I hold the table?

And it depends on what night of the week it was, if there was a holiday, or if there was horrible weather. My general policy depending on how busy we were was to hold the reservation for 20 minutes if there were people waiting. Then I'd give away the table.

I am the reservations manager at a fine dining seafood restaurant and let me tell you. I would say on a busy night with a large convention in town...like this weekend coming up, at least 15-20% cancelations, in addition to 5% no shows. If you ask this question on Monday I will have an exact number for a busy weekend.
