If you check who wins the competitions at the National and International Level, you will see a lot of champion chefs from either the Culinary Institute of America or Johnson & Wales University. These two schools are the premier schools in America for training expert chefs who are ALSO food service professionals. That is, they not only know how to make a beautiful dish, they also know how to run a professional kitchen, order food, keep the accounts for a restaurant, do a safe food sanitation plan, do advertising and public relations for a restaurant... in fact, do everything that you need to do to run a successful restaurant or catering or food service operation.

That sounds like a great idea, I hope you do it! I'm pseudo-vegetarian and also live in France and yes it is difficult to find restaurants or chefs who specialise in vegetarian cuisine. So there's a niche here waiting for you. There are a couple of names you could look up, such as Marc Veyrat who runs a great restaurant in Annecy in Haute-Savoir called La Maison de Marc Veyrat, and he specialises in plant based cuisine. Another is Michel Bras from Laguiole in Auvergne, his restaurant is called Bras : ) You could do a normal cooking course then specialise with one of these chefs for example. Try googling them to look at their websites. My husband is a chef but not vegetarian, so I've been working up my own recipes and publishing them on the net.
