Different religions and cultures depict their hair and skin as various colors. In the Catholic churches they give Jesus long wavy blonde hair and light/medium skin. In my religion he has short dark brown, almost black hair and a medium olive complexion, as that's what many of the Jews in that time, and still today, look like.
Sometimes, and I don't know if this is why they do it, people are given pale, porcelin-like skin in art forms because it looks clean and pure. So maybe that's what the statues are trying to depict.

Yes they should! I always use a dark skinned doll (baby Jesus) for our school Nativity plays to make that point!

yeah they're supposed to be middle eastern looking with darker features...thats why certain religions prohibit statues, pictures or anything that physically depicts God or any of the holy characters and etc. to prevent this kinda confusion, and to prevent ppl from making it a superficial 'race' thing.
