I love Nora Roberts. To pick only one is quite the task as I have read them all...hmmmm....I would have to say my favorite would be "The Reef" this book is what turned me on to reading. Also my other absolute fav's are:

Jewels of the Sun
Tears of the Moon
Heart of the Sea (the above 3 are an Irish Trilogy...fantastic!)
Also...Montana Sky & Carolina Moon are pretty terrific too.

I have read every single Nora Roberts and J.D. Robb book that has ever been published and to pick just one...man oh man that is hard. She is so prolific and she has written a ton of trilogy's and when she wrote for Silhouette she had a wonderful bunch of series.... The MacGregors ... The Stanislaski's So if I pick her true romance I'd go with the whole MacGregor thing, I've read them over and over and over again, but if I go with Novel then I have to pick the series called "Born In" there were three and they were so GOOD. And when you go with a J.D. Robb I would have to say "Glory in Death" because I was hooked and had to read the rest...before I knew it was Nora Roberts writing them. When you sit down with a Nora Roberts, you sit down with an old friend and enjoy.

I like the "Irish" series, Irish Dreams is good. These books are a little artificial, sure, but they are easy reading and take one into a place of love and struggle that we can usually not get into. I have this fascination with all things, or at least many things that are Irish and this allows me to dream on my own and also learn a bit more about the people and the culture.
