are you talking about a rental agreement that means you must be paid in cash?

The only way you could see a sample of a notarized letter would be if someone you knew had one and permitted you to look at it. In actuality a letter as you describe would be a letter would be a written by you saying you receive whatever amount in cash and endorsed by the person paying you in cash verifying the amount. Both of you would have to go in person to a Notary Public to sign such a letter in person. I am in the housing business and am also a Notary Public

You may make up any letter you wish.
Then you take the letter to a notary, who for a fee, applies a raised stamp (seal), and signs it.

I believe you are talking about a receipt.
Any office suppy store has a book of receipts, some with carbon copies, where you keep one and the other person gets one.

I used to sell real estate working my way through college, and was a landlord for over 20+ years. I'm glad not to be a landlord anymore.

I'd be real cautious about making it official, letting it be known that you're paid by cash, if what you mean is that you can't produce a tax return copy because you don't file although you have income. If you're working "under the table" then both you and the person paying you that way are breaking the law.
