Englewood, CO is pretty much a city on the outskirts of Denver to the south and south-west. Not sure what there is to do in the city itself. But, there are a billion things to do in CO in general. You can go to the hot springs in Glenwood Springs which is about 3 hours to the west on the I70 corridor. Or you can head south to Garden of the Gods in Colorado Springs(the air force academy is also here as well as royal gorge).
I would pack lightly for all temps. One day it can be sunny and 70 degrees, the next it could be snowing. With all the bizarre weather there this year who knows.

There's a lot you can do if you're staying in Englewood. You're only about 20 minutes from downtown Denver, where you can go shopping, dining at nice restaurants, visit the art museum's really cool new building, take in a play or musical at our Performing Arts Complex, etc. What is really cool is we now have a Light Rail elevated train system that will take you from Englewood directly into the city, so you don't even have to drive!
As far as the outdoors goes, May is a little too late for skiing, but we have a lot of great hiking and biking trails, whitewater rafting, etc. in the mountains. All you have to do is hop on west-bound I-70 from Englewood, and you'll be in the mountains in about an hour or less.
Colorado weather in May, to sum it up in one word, is UNPREDICTABLE! You'd be best off packing warm weather clothes (shorts, T-shirts, etc.) as well as jeans and sweatshirts, as I have seen it be 87 degrees in May, and I have also seen it snow. I live in Englewood, it is a suburb just South of Denver. Englewood is on the lightrail line (public transportation) so it is very easy to get downtown. The weather in May is usually in the 70's-80's, but remember to bring a rainjacket because we do get afternoon showers. The Denver area is pretty casual, you do not need a jacket or tie to eat out and even most of the nicer places won't look twice at your jeans. Bring your suntan lotion and your chapstick because Colorado is very sunny and dry in comparison to Wisconsin.
You can hop on the lightrail and go catch a baseball game at Coors field, they have tickets from $4 each and up. The stadium is in the heart of Lower Downtown (Lodo), which is full of bars and shops. People really congregate there in the summer months.
If you like the outdoors, Denver has one of the only urban kayak courses in the country. You get the benefit of the outdoors and the chance to check out a cool city. Confluence Kayaks rents kayaks and is very helpful. There is also a HUGE REI store by there that many of my out of town friends like to check out. The aquarium (Ocean Journey) and other cool stuff is all in that area too.

Englewood/Denver is also a big biking town. The joke here is that you often see a $5000 mountain bike strapped to a $400 car. You can rent bikes from Bicycle Dr. or many other places and they will provide you with a trail map. Cherry Creek State Park is in Englewood/Aurora and is super fun to ride, there is a nice big resevoir and lots of open space.
There is also (of course) the mountains. Ski season is over for anything close to Denver (A-basin might still be open but that is a treck). Be advised that weekend traffic in the mountains gets very bad in the summer, so I would suggest a weekday excursion. It will still be too cold to do much rafting, but there is always hiking and the beautiful vistas. Have Fun!

Take a drive over to Morrison, CO and try a restaurant called "The Fort", they have a website and the service and food were delicious.... If you can make it down to Colorado Springs (which is about 45 minutes south) definately go to Garden of the Gods (they have alot of trails and it is absolutely beautiful, you won't be disappointed!) another good thing to do is drive up Pike's Peaks, it offers more beautiful views, and if you go about another 45 minutes south of that to Canon City (Royal Gorge), you may be able to do some white water rafting (I used a company called Echo Canyon)
