I have a 10 yr old townhouse and every time I turn the water on, there's this nocking noise coming out of one spot behind the wall. I'm guessing it's an air pocket in plumbing or something. It sure goes away after a while, but I 'd like to get rid of it. Is there a way to fix it all by yourself? What should I do?

arm, the knock is the pipes not correctly installed with brackets or insulation to keep them firm to the studs. Either weld a copper air pipe to the low part of the pipes or screw on a galvy 8" piece to the low part...like in the basement. see your hdwr store for the part.
the only other alternative is to open the wall and support the pipe with brackets and close again.

It may be something called "watter hammer," which is actually a pretty easy fix. you can buy something called a "water hammer arrester" at your local hardware store, plumbing suppy store, or home center. It will probably cost somewher between $10 and $15. it could also just be the pipes moving around as the water flows through them and the pressure changes. The fix for that would be to secure the pipes with a fitting that also attaches to a wall stud. That would probably involve opening up the wall/floor to access the pipes.

Besides the two answers above: the water hammer could be coming from the washer in the filler in the toilet tank. These are rubber and wear, as they wear they become loose and when the water fills it creates enough pressure, not all the time, to let enough water sometimes unseen through and creates a shuddering or water hammering.
The washer is in the filler at the top of the stopper in the bulb and sometimes wears. It pays to check it out, just replace the tank unit before getting into a big job.
