In the western states one can still find hearty frontier "grub" in the form of the Irish-influenced corned beef hash and eggs breakfast (originally the eggs would always have been fried, but now, to class the dish up a bit, they might be poached). Hearty omelets, with plenty of eggs and lots of filling, are also characteristic frontier food.

Staple farmer commodity. Back in the day when most families raised animals, it was considered a readily available treat that could be easily gathered and cooked in a variety of ways. Unlike slaughtering an animal or waiting to pick a veggie or fruit, eggs were continually available and that's become engrained in many societies with dominantly agrisectarian roots. (i.e. America and Europe)
I do like eggs cooked over-easy, scrambled, and poached, but also enjoy eggs benedict and huevos rancheros. But sometimes I like to buck the trend and eat pizza, tacos, and even macaroni and cheese for breakfast.

probabaly all started with farmers getting up early in the morning to get the eggs, milk the cows, feed the pigs and all that. so i guess eggs for them became a breakfast food and soon everyone else was doing it too.
