Windsurfing is popular on Paros island. I'm not really sure about prices though. A lot of islands also have diving schools.
In Athens, it's a good idea to book accommodation well in advance. On the islands, it depends what you're looking for. Lots of hotels, pensions, and campsites have representatives waiting when each ferry comes in. There's almost always something available at a campsite, but August is the busiest month of the year (especially the two weeks leading up to August 15), and other options will fill up fast. It would be a good idea to at least look at some stuff online before you go. Along with the links below, you can check out the web pages for the various islands you'd like to go to.

Few words; You name it you'll find it. During August the Meltemi (a NE wind) is blowing so wind surfing is big on most of the Aegean islands, especially the Cyclades. depending on the sport between 2 and 100 euros per activity. Diving being the most expensive. Book for Athens but you can always find cheap accommodations on the islands if you are willing to spent a bit of time looking. Keep in mind that August is the height of the season.

You can do water ski, water parachute, wind surfing, scuba diving, in many islands (but mostly the big touristic islands). You can also do rafting, canoe-kayak etc. in rivers, not on the islands. If you want cheap accomodation, you can usually find something when you arrive (owners who have vacancies, stand outside the ferry), but in mid August it is very hard, everything is very full, especially since you want to go to touristic places with water sports. You can book hotels or studios-rooms over the internet too.
As for cliff diving, be careful: never dive from a rock you don't know or that you haven't checked by snorkelling or that other people are not diving from and you can get info: there are often rocks under the sea surface, the water is shallow there, and you can get badly hurt!

If you have the time and money take a side trip to Cyprus. And spend a few days exploring the island. they have some fantastic Beach's and the food is simple but great. The Turkish side of the island is a real treat for shoppers as well.

I did a lot of cliff diving in Santorini. Lots of great rock faces, fairly easy to climb in places, with sheer drops into the sea. Awesome.
