I was a passenger when my coworker accidentally ran over a huge opossum. Even though the poor thing was previously ran over, its carcass still made an awful mix of snapping and popping sounds. What are the main causes of these sounds?

They're caused by being run over.

I might be wrong but I'm pretty sure that when an opossum dies it still keeps its bones, flesh, organs, and not to mention all the little creatures feeding on its dead body.
