buy organic seed potatoes , plant and use only manure and water no pesticides or fertilizers. that is what makes an organic vegetable. you can boost the growth with water that you have soaked with manure and strained it is a shot in the arm to the plant also if you have a local fish market you can use the remnants of the cleaned fish, that is a long secret of the native american Indians. All potatoes are "organic"...they are "alive" and based on a complex carbon molocule...

Now if you are talking about the potatoes you can buy in the store that cost 3x more than any potato has a right to cost...

Simple...no (chemical) fertilizers, herbicides, insecticides, etc. To make them *true* "Organic" potatoes, you will need to convince all of your neighbours (to a distance of several blocks up-wind, and a block or so down-wind, and a couple blocks cross-wind in either direction) to not use them too. This will especially be true if you plan to sell them as "Organically Grown" in a Farmer's Market or some such come fall...otherwise you could face seriously ruinous fines if you live in the US.

Organic means it is grown with no pesticides or things to speed growing. So if you are wanting organic potatoes, then just grow them and do not use anything but water, great sunshine, and using organic matter such as manure and compost.

Step one, plant them. Step two....wait for rain.......occasionally weed the garden.
