I'm not 100% sure but I've heard that it comes from the fairgrounds , when you hit and knock off the coconut in the coconut shy it's usually a freak piece of luck hence the term "I should coco" .I hope this helps.

The expression is actually 'Ice your cocoa'

In the UK cocoa was always drank as a hot drink.

If you said something foolish, the response might be 'ice your cocoa' or in other words, you must be kidding. After all no-one would want to drink iced cocoa!

It means I should say so. I should cocoa. Like if you asked me to jump off a roof , I would say I should cocoa. ( Like f*** I will.)! Cockney rhyming slang.
