Dinner-in-a-Salad
Here's a quick way to create a nutritious, delicious all-in-one meal which has all of the food groups in one salad bowl. It's vegetarian and requires no cooking!
Ingredients
4 slices Whole grain bread
3 Large eggs, boiled and peeled
1 can Cooked kidney beans (or 3-bean salad)
1 can Mandarin oranges
1/2 Large cucumber
1/4 cup Shreadded low-fat cheese
3 Medium tomatos
1/4 pound Spring salad greens
1/4 Head iceburg lettuce
1/4 teaspoon Butter
1 clove Garlic, minced or finely chopped
2 Green onions
Preparation
Toast bread in toaster, butter and spread garlic on bread. Let cool. Cut into 1/2" square pieces for crutons.
Combine lettuce and spring mix, slice cucumber and tomatos and toss with crutons and drained beans and oranges. Thinly slice eggs, arrange on top of salad with garnish of thinly sliced green onions and a sprinkling of cheese. Serve with a vinagrette.

Here is my recipe for home made mac & cheese........
2 cups macaroni (2 tbsps salt) 2 cups milk
2 large eggs beaten
½ cup each green onions, onions, red and/or green peppers (you can add or subtract as you like)
1 tbsp mustard
Salt and pepper to taste 4 cups grated cheddar cheese; reserve ¾ cup for top
1 tbsp bread crumbs
Preheat oven 350F
Grease a 9x13 baking dish
Cook and drain macaroni (12 minutes at a rolling boil); mix in ¼ cup of butter and cover. In a large pot melt remaining ¼ cup of butter then add onions and peppers cooking until softened. Add milk and warm, then add beaten eggs. Stir a couple of tablespoons of milk mixture into eggs before adding to warm milk. Add cheese mixing well. Then add cooked macaroni mixing well. Pour into baking dish, sprinkle with remaining cheese and breadcrumbs. Dab with reserved butter. Bake for 45 minutes.

We'll probably be grilling chicken with garlic & herb and creole seasoning with green beans and either shells and cheese or mashed potatoes. Yummy!
