I think 'Managing Your Money' [ budget; invisible expenses like taxes and insurance; savings and investments; average cost of college education- tuition, board, lab fees, books, transportation, other expenses; how much it will cost to raise a child to adulthood, retirement, credit cards!]
Moms can/should teach their kids some kitchen, cleaning, and sewing basics [hems, sewing on buttons].Dads should teach changing flats, checking oil, changing oil, jumping a battery...
[Yes, I know I am using parents in their traditional roles]
I buy a Betty Crocker cookbook,a money managing book, and how to fight fair in marraige book for every one getting married.

HUMAN SEXUALITY- I took it in High School and it was the one class I got the most from. It is so sad that it is not required, and many schools are going with the religious based abstinence only approach. While it is best to save yourself for marriage, it is not going to happen for the majority of kids now days. I feel it could be potentially deadly if students are not properly informed on risks and diseases and how best to protect themselves. They need to know not all condoms are NOT created equal, and that you can contract HIV or Hep C from sharing straws from snorting drugs from microscopic droplets of blood from broken capillaries in the nose. I have two sons and it will be mandatory for my kids. I think so many parents fail to properly educate their children on sexual health issues out of fear that talking about it will bring on the actual act. But it's probably true many parents aren't that educated themselves. Either way, I think it would be a great idea to make sure EVERY child be informed on how to keep themselves safe and protected.

I think they should have a class on basic finances/managing money. Like how to balance a checkbook, ways to invest your money, understanding how to put away money to rent an apartment/pay bills.
I feel like a lot of time people get out of high school and college and aren't exactly sure what credit cards are good to open, etc.

For me it was mandatory to take that class in middle school. They didn't even offer it in my high school.
In my opinion everyone should have to take a business class, because no matter what career you go into the economy will affect you in one way or another.

My answer would have to be drama because it allows people to express themselves and many high school aged people have trouble expressing themselves at times. Plus it gives everyone a chance to have their "15 minutes of fame".

Yes, I would have to agree with you, I learnt a lot of things in that class. But our class had to switch for a month, and do shop, and wood working, which I also loved.
