The copper tubing runs through the room temperature air in back of your frig and is not affected by cold before it gets to your freezer, same as the water supply to your house can't freeze since it is not attached to your freezer...

The copper tubing is insulated to protect from freezing and boiling and that's why water flows at a room temperature in all faucets in your home...

When the water turns on to fill up the icemaker, it pours into the freezer compartment through a tube, not a hose. Sometimes they do freeze up, usually from a bad water valve that is leaking.
Some tubes are insulated, some have heater coils on them, most just flow water into the ice tray. Warm water flowing warms up the tube and water flows freely.

The hose runs up the back of the fridge. It enters the freezer directly into the ice making machine. the manufacturers thought of this very problem when making the product. good question! ^_^

runs off of heat verses cold, the coils are very hot, because of the heat they absorb from the food inside, and the water.
