I don't know how its done in grenades, but old-fashioned flint-and-steel sparking results from frictional heating of a bit of the steel which also detaches from the rest of the steel and oxidizes in air. In cigarette lighters, the role of the "flint" and the steel are reversed. The flint is an alloy of cerium and other rare earth metals called "misch metal", and that is what fragments, gets heated and oxidizes when the wheel is spun. The chemical formulas for both the iron and misch metal oxidation are basically metal + oxygen = metal oxide.
