This would mean that a) the plants have to be converted to self-pollinating plants : but incompatibility of the own pollen is quite complex process and only for few plants solved.
b) The genetic flow would break down and and might result in inbreeding depression.
c) may be it would be easier to "modify" other insects as potential "bee"-substitution? Not the honey production but the fertilization of crop plants?

No. These processes don't have anything to do with each other. Pollination does much more than providing a gene.
