Any suggestions for a dish that would feed 2 people for two nights?

www.Allrecipes.com has awesome recipes for any dish including vegetarian. The website even has it set up to where you can type in how many people you will be feeding, and it will calculate how much of each ingredient you will need. You can also print different page sizes, so the recipes are easy to store.

Or you can cook frozen lasagna...quick easy and good.

We love black bean lasagna-
9 noodles, cooked to package directions and rinsed
1/2 green pepper, chopped
1/2 onion, chopped
2 cloves of garlic, minced
2 cans of black beans, rinsed and drained, mash one
8oz of cream cheese
16 oz cottage cheese
1/4 cup sour cream
2T oil
2 15oz cans of tomato sauce

Cook the onion, pepper and garlic in the oil until tender, add both cans of black beans and the tomato sauce, heat through. Mix together the cheeses. Layer the noodles, cheese and sauce, ending with the sauce. Cook at 350 uncovered for 45 minutes. This also freezes well, and if you like the flavor you can add up to 1/4 cup of cilantro as well.

This makes a 9x13 pan size of lasagna, though, so it will feed either more people, or for more nights.

This is deliciouse and gets more and more rich as it is reheated. It is a great left overs dish. Also you could grab her a cheese pizza by freshetta. They are all vegetarian. It has no meat products what so ever.


INGREDIENTS
1 lb. box lasagna noodles
6 cups marinara sauce (store bought or see recipe below)
24 oz. low fat cottage cheese (for a richer texture, use ricotta cheese)
32 oz. shredded mozzarella cheese
1/2 cup chopped herbs (basil, oregano, or thyme)
2 eggplants, cut into circular slices ¼–1/8-inch thick
6–8 zucchini, cut lengthwise into slices 1/4–1/8-inch thick
5–6 portobello mushrooms, thinly sliced
2 red onions, thinly sliced
4 tablespoons olive oil
4 cloves garlic
3/4 cup chopped onions
Two 28-oz. cans of diced tomatoes
1/3 cup chopped basil

Sauté or oven-roast the vegetables until they are cooked through. Set aside.

To make the marinara sauce, begin by heating the olive oil in a pan over medium heat. Add the chopped onions and stir until golden brown. Add the garlic and tomatoes and simmer for 25 minutes. Stir in the basil and add salt and pepper to taste, then simmer for 10 minutes.

Preheat the oven to 350°. In the bottom of a 16" x 12" pan (a disposable pan is best), place a layer of dry noodles. On top of that, add about 1/3 of the marinara sauce, about 1/2 of the cottage cheese, and about 1/3 of the mozzarella cheese. Sprinkle herbs over the top, and add a layer of vegetables. Repeat the process. Finish with a layer of noodles, then top with tomato sauce and a thick layer of mozzarella cheese.

Cover the pan with plastic wrap, then wrap tightly with aluminum foil. Bake for 35 minutes, or until a knife pokes easily through the lasagna. Remove the plastic and foil and bake at 450° for 10 minutes, or until the top is browned.

Remove lasagna from the oven and let sit for 20 minutes. Garnish with fresh basil leaves or other fresh herbs.

(You can double the recipe to make 2 lasagnas and freeze an uncooked one. Bake the frozen lasagna for 50 minutes instead of 35.)

I mash potatoes with cottage cheese and put in a large pie pan. Then on the far edge of the pie I circle it with corn. then I add to it some green vegtables. then I sprinkle it with sharp cheddar cheese
If they stay off of milk products then leave out the cheese and the milk for the potatoes

In a small tupperwear make a salad. With cut up tomatoes, avacado, Blackberries, almond slices, Celery chuncks and cover with a rasberry vigernette dressing. It is good even the second day when the flavors set in.

if she's vegetarian and not vegan some good ideas are vegetarian lasagna or quiche, make 2 or 3 so she can freeze one. Soups are also good choices. Make the lasagna just like you'd make a meat one just don't add the ground beef, add some veggies like spinach, sliced fresh tomatoes, mushrooms, eggplant, ect.
If she's vegan, then I'd go with a vegetable soup. Make it hearty with beans and or pasta. And give a loaf of french bread to go with it.

How about making this bean curry.

get 2 cans of red kidney beans, rince them under cold water till water runs clear, set aside, in a cooking pot add 2tspns of olive oil then fry 1 chopped onion and 1 chopped garlic, add curry powder, tumeric, salt and pepper. stirl till fragrant, then add 2cans of crushed tomatoes and some tomato paste, 1 ltr water, stirl till bubbling add the beans simmer for 20-25 min till beans are soft (even though when you buy them in the can they are pre-cooked )and untill it thickens a little. you can make some rice to go on the side. It's very tasty full of iron and supper healty.

P.S, (you can buy curry powder and tumeric, which is yellow powder you only need 1 tea spoon of each, no moore than that) from the Indian shops, or good grocery shops.

How about a lasagna dish made with tempeh?

Layer the pasta with spinach, ricotta and regular tomato sauce.

If not, how about a curry dish made with lentils or chick peas. Add some pita bread for a full meal?
