The cold from your beverage or ice cream chills the blood traveling to your brain. The shock of this temperature change results in the painful brain freeze.

I think it has something to do with your body telling you "this is too cold for your stomach,slow down!!!" and makes you get a brain freeze to stop drinking it! I usually just hold the Slurpee;Icee in my mouth till it melts!!
