The Grand Cayman island. It has a great market there, It has a lot of craft items for sale. In truth, once you have see one, you've seen them all. San Juan Puerto Richo is also a very pretty island, with it's pastel colored buildings. Nassau also has a very interesting , for the lack of a better term, warehouse where the elaborate Junkanoo costumes are displayed.

It sounds like you aren't on too much of a budget, so I would consider St John. The beaches are amazing, it's a US territory so you can use your phone, and it's got some nice bars. And amazing resorts. Depending on where you are coming from, you can fly right into St Thomas and either rent a car (spend the money and rent from Amalie car rentals, they only rent jeeps), and take the car ferry to St John. Or you can cab it to the ferry, and cab to your resort if you don't want to deal with renting a car.
