Do you think that employer's forbidding two employees to have a relationship is a violation of our rights as Americans?

I think so.

What defines relationship anyway? Couldn't they just go out to dinners & do whatever but deny that they are dating?

I have always thought that it was a stupid rule. I understand the reason for it; relationships of almost any kind in a work place detract from the attention that should be paid to the work, BUT, when people spend that much time together, it would be very unusual for them not to form attachments of some sort, too, and rather unnatural.

Yes that a big violation of our rights

Also if that was a law that two employees can't date I wouldn't be here right now cause my parents met each other on the job

Well my sister's current job said that she could not date this one other guy because they both worked there. One time a manager saw my sister eating with him WHEN SHE WASN'T WORKING and said "How do you think that looks, STEVE?" He got fired after that for another reason. But anyway when she applied for the job they told her that no relationships were allowed that could cause problems. Like if you would be spending time talking and joking and pinching each other's butts and getting distracted from working.

Fraternization is discouraged at many major companies, it can lead to complications in the work place and adjusted morals. I met my wife at work and we still work together, I guess we are lucky that our company actually encourages it. As long as she doesn't work directly for me.
