The helmsman steers the sub. The planesman controls the sub's depth. The quartermaster assists the navigator in navigating the sub. The captain rarely is directly involved in controlling the ship, that is left to the Officer of the Deck (OOD). The captain is responsible for everything that happens on the sub, including safe navigation.

Could be either of those offered, helmsman or quartermaster. In the Royal Navy the title quartermaster is (usually a leading hand or senior able seaman) a rating responsible, for gangway security when the ship or submarine is alongside. He/she keeps watches with 3 other Q.M's and when at sea they traditionally carry out helsman duties again on a watch keeping basis.

I would guess the helmsman like on all boats. But remember submarines can move up and down as well, is that counted as steerring as well.

The helmsman turns the submarine left and right. On 688 class submarines with fairwater planes, he controls depth also when shallow and at slow speeds.
The stern planesman controls depth during normal operating conditions in deeper water.
